6-8 Roma tomatoes, diced
1 green pepper, diced
1 medium red onion, diced
cilantro to taste, chopped
2-3 jalapenos or to taste, finely chopped/minced
1 tsp. salt
juice from 1 fresh lime

Combine all in a bowl. Refrigerate or serve immediately.

1 can (28 oz) diced tomatoes 1 can (4 oz) ortega diced green chiles 1/2 cup chopped red onion(or any sweet onion can be used) 2 chopped jalapeno peppers 1 clove minced garlic 4 TBS fresh chopped cilantro 3 TBS cuervo gold tequila 1 TBS good olive oil(extra virgin preferred) 1/2 tsp salt Drain the tomatoes well and place in a large bowl. Add the other ingredients in the order listed. Mix well. Refrigerate for at least 4 hours, up to overnight.

8 Roma tomatoes 1 large Bermuda onion (or sweet onion) 2 cans crushed tomatoes, Mexican style, reserve liquid 1 bunch fresh cilantro (use only the leaves) 2 jalapeno peppers (see note) 1 medium lime, peeled (see directions) 1/2 teaspoon seasoning salt 1 to 2 clove garlic Dice tomatoes, onions, and peppers (adjust heat by more or less jalapenos, remove seeds and membrane. finely dice cilantro. Use only green peel of lime finely minced. Mince garlic and add all ingredients together. Also give a add a squeeze of lime and sometimes a pinch of ground cumin.
