Mexican And Hispanic - Salsa - Freezer Special Salsa

5 lbs. tomatoes, peeled and chopped
1 bell pepper, seeded and diced
1 can (4 oz.) diced jalapenos
1/2 cup onion, diced
1 cup dark brown sugar
1 cup cider vinegar
1 tbsp. cinnamon
1 tsp. cumin


Simmer tomatoes, bell pepper, jalapenos and onion for one hour. Add the remaining ingredients and simmer 30 minutes more. Cool slightly and puree in blender. Freeze in containers. When ready to serve, thaw and heat in microwave. Makes 5 cups

2 cups chopped tomatoes 1 can (10 oz) tomatoes and green chilies 1/2 cup chopped green pepper 1/2 cup chopped green onions 1/2 cup chopped, seeded, peeled cucumber 3 cloves garlic , minced 3 Tb olive oil 3 Tb finely chopped fresh cilantro 1 Tb red wine vinegar 1 pkg (8oz.) Feta Cheese crumbled Mix all ingredients except cheese. Spread in 9-inch pie plate. Top with feta cheese. Serve with tortilla chips. Makes 3 cups

18 peeled tomatoes 6 jalapeno peppers 2 onions 4 cloves garlic, chopped 1/3 cup sugar 1/3 cup vinegar 1 teaspoon salt Blanche tomatoes enough so skins peel. Cut into quarters and place in large pot. Wash and chop onions and peppers, add to tomatoes. Stir in remaining ingredients. Cook down. Can be canned or frozen.
