Mexican And Hispanic - Killer Queso
1 pound hot bulk pork sausage1 pound Velvetta® cheese, cubed
1 (10 oz.) can tomatoes with chiles (such as Rotel® brand) or 1 (8 oz.) jar picante sauce
Brown sausage and drain grease. Add cheese and tomatoes to pan and heat until cheese is melted. Add drained sausage and serve.
Serve with corn or tortilla chips. Also very good on a baked potato if you have any leftover.

1 (15 oz.) can refried beans 1 (8 oz.) jar picante sauce 1 cup grated cheddar cheese Stir together and heat in microwave 4 minutes. Stir and serve with corn tortilla chips. Can add 1 pound browned ground beef to the above ingredients prior to heating.
Mexican And Hispanic - Mexicali Bean Dip
1 (15 oz.) can refried beans 1 (8 oz.) jar picante sauce 1 cup grated cheddar cheese Stir together and heat in microwave 4 minutes. Stir and serve with corn tortilla chips. Can add 1 pound browned ground beef to the above ingredients prior to heating.

5 small jalapeno peppers 2-1/2 cups chili hot beans, mashed 1 tbsp. oil 1/2 tsp. salt 1/2 tsp. oregano 1/4 tsp. garlic powder Cut off tops of peppers. Combine whole peppers and remaining ingredients in saucepan. Simmer 15 minutes, adding water if needed, to keep beans from sticking to bottom of pan. Cool mixture and remove peppers. Serve dip with fresh vegetables. NOTE: This is a Mexican vegetable dish, but can easily be an appetizer when served with crackers.
