Mexican And Hispanic - Fresh Olive Salsa

6 ounces Lindsay ripe olives -- diced
4 ounces diced green chiles
2 large tomatoes -- chopped
4 green onions -- chopped
3 tablespoons olive oil
1 1/2 teaspoons garlic salt
1 1/2 tablespoons white wine vinegar


Combine first 4 ingredients in a bowl. Mix the oil, garlic salt and wine vinegar separately; then add to bowl. Chill 3 hours and serve with chips.
Serves 3

Mexican And Hispanic - Fresh Mango Salsa
2 medium size ripe mangoes 1 bunch coriander (cilantro), chopped 1 medium size red pepper 1 small red onion 2 cloves garlic 1 tbsp lemon juice 1 tbsp balsamic vinegar 2 tsp brown sugar Black pepper, coarse ground Salt Peel and stone mangoes and cut into small dice. Seed red pepper and chop finely. Finely chop onion and crush or finely chop garlic. Mix all ingredients together and season to taste. Cover and chill.
