Mexican And Hispanic - Corni Rice A Roni

1/2 medium onion -- chopped
2 cloves garlic -- minced
1 tablespoon olive oil
1 (5.9 oz.) box chicken flavored Rice A Roni
4 ounces reduced fat cream cheese
1/2 cup reduced fat sour cream
4 ounces shredded Monterey jack cheese
4 ounces shredded Cheddar cheese
1 (8.5 oz.)can cream style corn
1 (11 oz.) can corn kernels -- drained
1 (4 oz.) can chopped green chilies
Salt and fresh ground pepper -- to taste
Cayenne pepper -- to taste


Preheat oven to 350.

Brown Rice A Roni according to package directions, adding onion and garlic.Proceed as package directs, but cover and simmer only about 8 minutes.

In a large bowl, mix hot Rice A Roni with remaining ingredients. Pour into a 2-1/2 qt. baking dish sprayed with cooking spray. Cover and bake for 30 minutes or until hot and bubbly and rice is tender.

Cool slightly before serving.

2 Tbl. oil 1 1/2 cups white rice 1 small green pepper, chopped 1 medium onion, chopped 1-3 crushed cloves of garlic (to your taste) 1 (16 oz.) can chopped tomatoes (with or without jalapenos) 2 cups water Salt and Pepper Heat oil in large skillet and add rice stirring frequently so that it does not burn. This should take about 3-5 minutes. (The ends of the rice should be starting to turn brown.) Add the other ingredients all at once, stirring to mix ingredients. Cover tightly; adjust heat to slow boil. Cook for 15-20 minutes.

3 cups cooked white rice 2 roasted bell peppers, diced 3 jalapenos, diced 1 cup corn 1 c sour cream 1 cup shredded Monterrey jack cheese 2 Tbsp. chopped fresh cilantro 2 Tbsp. parsley 1/3 cup chopped green onions Preheat the oven to 350 degrees. Combine all ingredients, reserving 1/4 cup of cheese. Put mixture into casserole dish, bake uncovered for 30 minutes. Remove and sprinkle with reserved cheese, return to oven for 5 more minutes until cheese melts.
