Mexican And Hispanic - 7 Layer Mexican Dip

1 cup sour cream mixed with 1/2 cup mayonnaise and 1 small package of taco seasoning mix

8 ozs. grated cheddar cheese
2 small cans jalapeno bean dip
1 bunch green onions, chopped
3 medium tomatoes, coarsely chopped
1/2 cup chopped, ripe olives
3 very ripe avocados, mashed with 2 teaspoons lemon juice
salt and pepper to taste


Layer in a serving bowl in this order:
Beans
Sour cream mixture
Avocado mixture
Tomatoes
Cheddar cheese
Green onions
Ripe olives

1 cup chopped onion 1 Tbl. veg. oil 1 cup chunky salsa, well drained 1 (10 oz.) pkg. frozen spinach, thawed and squeezed dry 2 1/2 cup shredded Monterey Jack cheese 8 oz. cream cheese, cubed 1 cup light cream 1/2 cup sliced black olives 1 cup chopped pecans Preheat oven to 400. Saute onion in oil until tender. Stir in salsa and spinach, cooking 2 more minutes . Transfer to a 2 1/2 qt baking dish. Stir in 2 cups of the Jack cheese, the cream cheese, cream and olives. Sprinkle with pecans. Bake 30 minutes or until

3 avocados (very ripe)3 tbl. sour cream1 tbl. lemon juice1 (4 oz.) can chopped green chilieschopped green onions, to tasteshredded Monterey Jack and Cheddar cheese, combined half and halfdiced tomatoesdiced olives 1st Layer: Combine refried beans and taco seasoning and spread on platter. 2nd Layer: Combine avocados, sour cream and lemon juice, and spread on top of 1st layer. 3rd Layer: chopped green chilies. 4th Layer: chopped green onions - to taste. 5th Layer: cheeses. 6th Layer: Diced tomatoes. 7th Layer: Diced olives.
