Low_fat - Vegetable - Sweet Potato Casserole

1 cup all purpose flour
2/3 cup packed brown sugar
1/4 cup pecans
1/4 cup butter or margarine -- melted
1/2 tsp. ground cinnamon
4 medium sweet potatoes -- peeled and halved
1/2 cup white sugar
1 1/2 tsp. vanilla extract
1 large egg white
1 can evaporated fat free milk -- (5 oz.)
cooking spray

Preheat oven to 350 degrees F. Lightly spoon flour into measuring cup; level with knife. Combine flour and next four ingredients in small bowl, stirring to form streusel. Set aside.

Place potatoes in a pot and add water to cover. Bring to a boil and cover, reduce heat and let simmer for 30 minutes. Drain well and mash in large bowl. Stir in 1 cup streusel, granulated sugar, vanilla, egg white, and milk. Spoon into a 2 quart casserole coated with cooking spray. Top with remaining streusel.
Bake casserole uncovered for 45 minutess, or until heated throughout.

Yield:8 servings.

Sweet Potato French Fries: Slice potatoes into size of fries you desire. Soak in cold water for 1/2 hour; drain well and pat dry with paper towel. Spray lightly with non stick spray or olive oil and mix well. Spread out on tray and bake with convection set at 500 degrees for 10 minutes. Lower temp to 400 and bake for another 5 to 7 minutes depending on how thick you cut the potatoes. Make sure potato is cooked through, if necessary turn oven down and cook more, but if you make them the normal size of french

2 cups sunchokes, diced 2 cups yams, peeled and diced salt and black pepper to taste 1/2 cup onion, chopped 1 clove garlic, minced 1 tbsp. fresh parsley, minced 1/8 tsp. ground nutmeg 1 tbsp. vegetable oil Place sunchoke and yams in a saucepan with enough water to cover. Bring to a boil, then reduce to a simmer. Simmer, covered, for about 5 or 6 minutes. Drain. In a non-stick skillet, heat the oil, then saute the onion and garlic until the onion is tender. Add sunchokes, yams, parsley, nutmeg, salt and pepper. Toss and heat through, about 2 more minutes.
