Low_fat - Tropical Romaine Salad Dressing

Dash of pepper
1 tbsp. canola oil
1 tbsp. chopped parsley
2 tbsp. sugar
1/3 cup raspberry vinegar
1/4 cup water
1/4 tsp. hot sauce


In a small bowl, mix all ingredients together. Chill. May be made a day ahead.

Low_fat - Tofu Mayonnaise
1 cup firm tofu cubed 1/2 cup plain-lowfat yogurt 1 tablespoon tarragon vinegar 2 teaspoons vegetable or olive oil 1 teaspoon prepared mustard 1/4 teaspoon salt, or to you taste 1/8 teaspoon cayenne or black pepper or to your taste 2 tablespoons minced tarragon, chives or parsley. In a food processor or blender whirl the tofu, yogurt, vinegar, oil, mustard, salt and pepper, for 30 seconds or until smooth, scraping the sides down once. Transfer this mixture to a container and stir in the herb of your choice. Cover and chill until thickened (about 30 minutes). Will keep covered
