Low_fat - Sandy's Zucchini Or Yellow Squash Cheese Casserole

4 medium squash, cut in 2" pieces
1/2 Cup egg substitute (or 2 beaten eggs)
2/3 Cup cottage cheese
1 1/2 oz. reduces fat cheddar cheese, grated
1/4 to 1/2 tsp. dill (dried or fresh)
Salt and pepper, to taste
1 Tbl. reduced fat margarine
3 slices bread, crumbled


Preheat oven to 375 degrees F.

In a small amount of boiling water, cook squash until crisp-tender. Drain well and place in a casserole dish which has been sprayed with vegetable coating.

Combine the egg substitute, cottage cheese, cheddar cheese, dill , salt and pepper and spread over the squash.

Melt the margarine and combine with bread crumbs. Sprinkle over the casserole and bake at 375 degrees for about 25 minutes, or until set and lightly browned.
