Low_fat - Crockpot Mediterranean Stew
1 eggplant -- chopped2 zucchini -- chopped
1 red or green bell pepper -- seeded/chopped
1 onion -- chopped
3 large tomatoes -- chopped
2 (16 oz) cans garbanzo beans -- drained/rinsed
1 (14 oz) can artichoke hearts (in water) -- drained/quartered
1 tbsp. oregano
freshly ground black pepper
salt
crushed red pepper flakes -- to taste
2 tsp. garlic powder
1 pkg. egg noodles
Add all ingredients, except egg noodles, to crockpot and stir well. Cook on low for 8 hours. Serve over the cooked egg noodles.
