Low_fat - Chicken - Crunchy Oven Fried Chicken

1 cup crushed corn flakes
2 tablespoons chopped fresh parsley
1/2 teaspoon poultry seasoning
1/2 teaspoon lemon pepper
1 chicken breasts, skinless and boneless
1/4 cup plain low-fat yogurt
Vegetable cooking spray

Combine corn flakes, chopped parsley, seasonings and lemon pepper in shallow dish. Brush chicken with yogurt and roll in corn flakes.

Place chicken in broiler pan, coated with cooking spray. Bake, uncovered at 400 degrees for 45 minutes or until done.

This oven-fried chicken is crunchy and as spicy as you want it to be. Enjoy it hot or cold. Makes 8 servings 2 teaspoons dry mustard (optional) 1/4 cup Dijon-style mustard 2 garlic cloves, mashed into a puree One (3-pound) chicken, skinned and cut into 8 pieces 1/2 cup + 1 tablespoon plain dried bread crumbs 1/2 teaspoon dried thyme leaves 1/2 teaspoon black pepper 1/4 teaspoon salt 1/8 teaspoon ground red pepper (optional) In large bowl, combine dry mustard, if using, and 1 teaspoon cold water; stir well until mustard is dissolved. Let stand 30 minutes. Preheat oven to 400oF.

1 1/2 cups chopped cooked chicken breast 1/4 cup diced English cucumber 1/4 cup minced celery 2 scallions, chopped 1 tablespoon finely chopped fresh flat-leaf parsley 1/4 cup fat-free mayonnaise 2 tablespoons fresh lemon juice 1/8 teaspoon freshly ground pepper 4 (8-inch) fat-free flour tortillas 4 red-leaf lettuce leaves Combine the chicken, cucumber, celery, scallions, parsley, mayonnaise, lemon juice, and pepper in a medium bowl. Warm tortillas according to package directions. Divide and layer the lettuce and chicken mixture on the tortillas. Roll up. Fasten with toothpicks, and cut diagonally in half.
