Low_fat - Bread - Low Fat Bran Muffins

1 1/4 cups 100% bran® cereal
1 cup milk
1/4 cup molasses
2 teaspoons sugar
2 egg whites
1 cup flour
3 teaspoons baking powder
1 apple -- chopped fine
1/2 cup raisins

Preheat oven 350 degrees. Soak together the first 5 ingredients for about 5 minutes. Add the remaining ingredients and stir into bran mixture. Mix until moistened.

Fill paper lined muffin tin about 3/4 full and bake for 15-20 minutes or until tester comes clean.

Note: I calculated 3 points (WW 123) per muffin

1 cup low-fat buttermilk 1/2 teaspoon baking soda 1 cup self-rising cornmeal 1/4 cup flour 1/4 cup whole kernel corn, drained 2 teaspoons canola oil Spray an 8-inch cast iron skillet with nonstick cooking spray. Heat the skillet at 450 degrees for 5 minutes. Mix the buttermilk and baking soda in a bowl. Add the cornmeal and flour, stirring until mixed. Stir in the corn and canola oil. Spoon into the prepared skillet. Bake at 450 degrees for 20-25 minutes or until golden brown. Remove from oven and invert onto serving plate. 8 servings PER SERVING: Calories 75, Carbohydrate 12.5 g,

2 1/2 cups white flour 2 tsps. baking powder 1/2 tsp. salt 1/2 c. sugar 1 tbsp. cinnamon 8 ozs. applesauce 1 egg 1 c. skim milk Mix the dry ingredients together and add the applesauce, then the egg and milk. Pour into nonstick loaf pan and bake at 350F for 50 min. Remove and cool. Makes 12 servings. Calories...77...Fat..1.1 g....Fiber...1 g.
