Low_carb - Vegetable - Barbo's Original "noodle Kugel"

1 med. spaghetti squash -- to microwave
1/2 cube butter
1/2 pint sour cream (to 1)
6 eggs -- beaten
salt and pepper -- to taste
crispy fried onions -- for the top (optional)

Preheat oven to 350 degrees. Spray a 9 x 13-inch baking dish with Pam.

Have produce man cut the squash in half length ways for you. Remove the seeds, wrap in saran, and place face side down on baking dish with about 1/3 c. water. Cook on high for about 30 minutes or until squash is well cooked. Scrape out all of the squash threads into a large bowl. Cool for 10 minutes.

Beat eggs and add all ingredients to squash. Transfer to prepared baking dish. Bake open for 45 minutes or until mixture is set and firm and golden brown. Remove from oven and sprinkle with crispy onions. Let it set up for 5-10 minutes then cut into small squares.. Pass the sour cream.

7 oz can whole chiles, split 8 oz. grated cheddar cheese 6 eggs, slightly beaten (can use egg substitute) 3/4 cup milk 1 tblsp. all-purpose flour 1 tsp. baking powder Preheat oven to 350 degrees. In greased 7 x 11" baking dish, layer split chiles and 1/2 of the cheese. Combine eggs, milk, flour, and baking powder; mix well. Pour over chiles. Top with remaining cheese. Bake 30-40 minutes until puffed and browned.

Total time: 30 minutes Servings: 8 2 tablespoons butter 1 large yellow onion, diced 1 tablespoon minced garlic 1 cup jasmine rice 1/2 pound diced roasted turkey (2 cups) Grated zest and juice of 1 lemon 1 teaspoon fresh minced thyme 3 bay leaves 1 quart turkey or chicken broth 3 cups half-and-half 1/2 teaspoon salt 1/4 teaspoon pepper Melt the butter in a 5-quart saucepan over medium heat and add the onion and garlic. Cook until the onion is softened, 3 to 4 minutes. Add the rice, turkey, lemon zest and juice, thyme and bay leaves. Cook for 30 seconds.
