Jams And Jellies - Jam - Jam In A Zap

About 3 half-pints
2 cups dried apricots
2 cups water
1/4 cup fresh lemon or lime juice
2 tablespoons real maple syrup
1/2 teaspoon almond extract


In batter bowl, combine the apricots and water. Cover. Microwave on high 6-7 minutes, or until apricots are soft, stirring after 4 minutes. Drain and reserve 3 tablespoons of the liquid. Puree the cots with the reserved liquid in food processor or blender. Return to the batter bowl and add the juice, syrup, and extract. Cover and microwave on high for 3 minutes. Pour into hot, sterilized jars. Can be stored in refrigerator or can be frozen, or you can process it in a water bath to seal it.

1 (#2) can of red cherries (sour pitted) 1 (10 oz.) pkg. frozen strawberries 3 tbsp. lemon juice 4 1/2 c. sugar 1/2 bottle of Certo Red food coloring (Cherries may be put into blender). Mix all ingredients well and bring to a boil. Boil 2 minutes stirring constantly. Add 1/2 bottle of Certo, 1 teaspoon red food coloring, and continue to cook for 3 minutes stirring constantly. Pour into sterilized jars and seal.

1 kg./ 2 lb. 4oz. small green tomatoes 725 g. /1 lb. 12 oz. white sugar 1 fresh lime Vanilla pod Wash, wipe and slice the tomatoes thinly. Place in a bowl in layers with the sugar and leave for 24 hours. Wipe the lime and slice it thinly, removing pips. Place all ingredients in a stainless steel pan, and bring to the boil. Skim and continue to simmer very gently, stirring occasionally till the jam is golden and a set it obtained. This will take approximately 2 hours. Remove vanilla pod and cool before potting. Seal
