Jams And Jellies - Easy Rhubarb Jam

5 cups diced rhubarb
1 (8 ounce) can crushed pineapple (drained)
2 cups sugar
1 small pkg. (3 oz.) strawberry gelatin or raspberry or cranberry flavor


Mix together the rhubarb, pineapple and sugar. Let stand 2 hours, then boil 12 minutes. Remove from heat and add the dry jello, stir. Put in jars or plastic containers. Refrigerate--also freezes well.

2 quarts crushed elderberries 1/4 cup vinegar 6 cups sugar Combine berries, vinegar, and sugar. Bring slowly to boiling, stirring occasionally until sugar dissolves. Cook rapidly until thick. As mixture thickens, stir frequently to prevent sticking. Pour boiling hot mixture into sterilized jars. Adjust lids. Process in boiling water 5 minutes. Remove jars; cool and store. Yield: 6 half-pint jars.

1 lb. Tart green apples 1/2 cup Raisins 1 cup Water 1/3 cup Lemon Juice 1 tsp. Ground Cinnamon 1/4 tsp. Ground Allspice 4 1/2 cups Granulated Sugar 1 cup Firmly packed light brown sugar 1/2 tsp. Margarine or butter 1 Pouch Certo liquid fruit pectin Peel, core and finely chop enough apples to measure 2 cups. Place in preserving kettle or Dutch oven with raisins, water, lemon juice, cinnamon and allspice. Stir in sugars and margarine/butter. Place kettle over high heat and stir until it comes to a full boil. Boil hard for 1 minute, stirring constantly. Remove from heat
