Irish - Bread - Irish Tea Brack

1/2 cup dried peaches, chopped
1/2 cup apricots, chopped
1/2 cup prunes, chopped
1 cup hot strong tea
1 cup sugar
1 egg beaten
1 Tablespoon orange marmalade
1 teaspoon pumpkin pie spice
1 3/4 cup flour


Combine dried fruit and tea in a large bowl, cover and let stand over night. Add next three ingredients to the fruit mixture. Stir well. Gradually add flour mixture, mixing well. Spoon batter into greased 9 " square pan. Bake @ 350 for 35 minutes or or until wooden pick comes out clean. Serve with butter.

In a large bowl, whisk together 2-1/2 cups of flour with baking soda, salt and sugar. Add buttermilk all at once and mix with a spoon until thoroughly combined. Add remaining 1/4 cup flour and stir until combined and dough holds together in a ball. Turn out onto lightly floured surface and gently knead with lightly floured hands to shape dough into shape of pan.

1 cup self-rising flour 1/2 tsp. salt 1 tsp. Baking soda 1 cup buttermilk Mix all ingredients together. Turn out onto lightly floured surface. Knead for approximately 3 minutes.
