Hawaiian - Soup - Portugese Bean Soup

1 pound dried kidney beans (or small red beans), soaked in water overnight and drained
2 cloves garlic, minced
1 onion, chopped
5 tablespoons Worcestershire sauce
1-2 smoked ham hocks
12-16 ounces linguica sausage, or smoked turkey sausage, cut in small pieces
3 large potatoes, chopped
4-6 carrots, chopped
1/2 head green cabbage, chopped

In large pot, place kidney beans, garlic, onion, Worcestershire sauce, ham hocks and cover with water, 2 or 3 inches. Simmer for approximately 2 hours. Pull ham hocks out and strip meat off bones, chop meat and return to pot. Add potatoes, carrots, and sausage. Simmer for two hours. Then add cabbage and simmer until cabbage becomes soft and part of the soup.

This is a soup that is better the next day, as it becomes nice and thick. It is wonderful served with cornbread or sweet bread.

8 lg Sweet potatoes or yams peeled and cut into 2" chunks 2 c Pineapple chunks 1 c Banana; sliced 2 c Hearts of palm; cut into 2" chunks 2 c Tempeh; cut into 1" chunks 2 c Dried lentils 3 c Vegetable stock 1/2 c Honey or other natural sweetener 2/3 c Prepared spicy mustard 1/2 c Cider vinegar Preheat oven to 250 deg. Combine all ingredients in a large roasting pan or casserole dish. Place in oven and bake, covered, for 2 hours. Stir occasionally and serve hot. Hint: For a sweeter taste, use apple juice to replace 1/2

Conch Butter/Margarine Bread Crumbs Fresh Grated Parmesan Slice the conch thinly and pound to tenderize just as you would veal. Cut into bite-size pieces. Dip pieces into melted margarine or butter then coat with mixture of 1/2 breadcrumbs mixed with 1/2 parmesan. Fry in butter or margarine until golden.
