German And Austrian - Vegetable - Rolt Kraut (red Cabbage)

1 head of red cabbage (approx. 3 lbs.)
2 large cooking apples, peeled, and chopped
1 large onion, chopped
1/4 cup sugar
1/4 cup vinegar
6 slices bacon, cooked and crumbled
2 Tbl. bacon drippings
1 tsp. salt
pepper
1/2 cup boiling water


Coarsely shred cabbage. In a large saucepan, combine all ingredients. Bring to a boil, reduce heat and simmer, covered for 1 hour.

2 tbl. oil1 large sweet onion1 medium to large head red cabbage, shredded1 large apple, cubed1 cup water1/4 cup cider vinegar1/4 cup sugar1/2 tsp. salt3 to 4 grinds black pepper1/4 tsp. ground clove1/2 cup chopped walnutsHeat oil in a large heavy pot over medium heat. Add onions and saute until glassy. Add cabbage and apple; saute 5 minutes. Add remaining ingredients, except walnuts. Bring to a boil, reduce heat and simmer for 35 minutes or until tender. Top with walnuts when served.
