Fruit - Watermelon Margaritas

2 cups frozen watermelon cubes
3 ounces tequila
1/2 ounce Grand Marnier
1/2 ounce Cointreau
2 tablespoons freshly squeezed lime juice
Garnish: Watermelon wedge with rind


In a blender combine all ingredients. Blend until smooth. Garnish with watermelon wedge (optional). Serve immediately.

For 20 cups of rind make this syrup: 7 cups sugar 2 c. vinegar 1/4 t. oil of cloves 1/2 t. oil of cinnamon. When rind has been parboiled, drain off water. Bring syrup to boiling poing and pour over the rind. Let this stand overnight in kettle. Next morning do the same. Third morning heat both rind and syrup and seal in jars. Makes 5 pints. Using the oils keeps the pickles clear and transparent.

3 pounds watermelon 3 cups sugar Peel and seed the watermelon; dice the flesh. Put one layer of the watermelon into a bowl and add a layer of sugar; continue until all of the watermelon and sugar have been used. Cover the bowl and let it stand in a cool place for 4 hours. Place this mixture in a preserving kettle and cook over moderate heat, stirring frequently, until mixture is thick, about 45 to 50 minutes. Skim off foam with a metal spoon, if needed. Ladle into hot, sterilized jars and seal immediately with paraffin wax. Makes four half-pints
