Fruit - Strawberry - Champagne Strawberry Soup

10 oz. pkg. frozen strawberries in syrup, thawed
2 tablespoons cornstarch in 1/2 cup cold water
1 cup low fat sour cream
2 cups half and half
2-4 tablespoons strawberry liqueur
Garnish
Splash of champagne
Dollop of whipped cream
Large strawberry


Bring strawberries to boil, stir in cornstarch mixture. Stir and simmer for three minutes. Transfer to a bowl and cool to room temperature. Whisk in sour cream, 2 cups cream and liqueur. Chill, covered. Serve with a splash of champagne, a dollop of whipped cream and a strawberry!

Purchase your favorite Champagne and chill. Buy fresh strawberries that have their stems intact. Wash, dry and refrigerate the strawberries. 1/2 cup sugar1 envelope unflavored gelatin1-1/3 cups cold water, divided1/2 cup rose’ or blush wine3 tbl. orange juice2 cups strawberries, thinly sliced Sprinkle sugar and gelatin over 2/3 cup water in saucepan. Let stand 1 minute to soften. Stir over low heat to dissolve sugar and gelatin. Pour into large bowl. Add remaining water, wine and juice. Chill until mixture mounds slightly, about 1 hour.
