Fruit - Pineapple Rice

1/2 cup uncooked brown rice, regular or quick-cooking
1 cup water
1 (4-ounce) can crushed pineapple in its own juice

If using regular brown rice, combine rice and water in medium saucepan. Bring to boil and lower heat to simmer. Cover with tight lid and simmer 35 minutes. Add pineapple and its juice, cover again and continue to cook over low heat about 10 or more minutes.

If using quick-cooking brown rice, combine all ingredients in saucepan and follow package cooking instructions.

To prepare in microwave, combine regular rice and water in deep 1 1/2-quart container and cover loosely. Cook on high (100 percent power) for 5 minutes, then reduce to medium (50 percent power) 25 minutes. Add pineapple and continue to cook on medium 10 minutes more. Fluff with a fork.

For quick-cooking rice, combine all ingredients and cook according to package microwave directions.

1 1/2 cup cooked rice 2 tablespoons sugar 1/4 tsp. salt 1/2 tsp. vanilla 2 cups miniature marshmallows 1 pkg. ( 3 oz.) lemon Jello 1 cup crushed pineapple, drained 1 cup whipping cream, whipped Cook rice according to directions on package. After cooking and while rice is still hot add the marshmallows, sugar, salt and vanilla. Mix in powdered Jello and let stand till thickened. Fold in pineapple and whipped cream. Refrigerate overnight.

1 1/2 cups sugar 1/2 cup margarine 1/2 cup Crisco 4 eggs 1 1/2 cups flour pinch of salt 1 tsp. vanilla extract 1/2 cup crushed pineapple, do not drain Cream sugar, margarine and Crisco until fluffy. Add eggs one at a a time, beating well after each addition. Add flour, salt and vanilla; fold in pineapple. Bake in a well greased Bundt or tube pan. Bake at 325 degrees for 1 hour or until tested done.
