Fruit - Pineapple Or Strawberry Dessert

1 (4 serving size) vanilla pudding
2 cups milk
8 oz. cream cheese
1 (9 oz.) pkg.Yellow Jiffy® cake mix
1 egg
1/2 cup water
1 (20 oz.) can crushed pineapple -or- 2 (10 oz.) containers frozen strawberries, thawed
Cool Whip -or- whipped cream to cover
Chopped nuts -or- slivered almonds, optional

Preheat oven to 350° F.

Prepare Vanilla pudding using 2 cups milk. Let cool with Saran Wrap pressed on the surface. When it is cool beat the pkg. of cream cheese in a medium bowl and then beat in the pudding.

Prepare a Jiffy yellow cake mix - the size usually bakes in an 8" cake pan, but bake in a 9x13" pan at 350* for 20 minutes.

When cake is cool cover with crushed pineapple or strawberries. Top with Cool Whip and nuts. Chill.

1 large ripe banana peeled and diced or 3/4 cup chopped fresh pineapple 1 medium nectarine pitted and chopped (2/3 cup) 1/2 of large green pepper chopped (1/2 cup) 2 tablespoons snipped fresh cilantro or parsley 2 tablespoons lime juice 1 teaspoon brown sugar Toasted pita wedges from 3 small pita bread rounds For banana salsa, in medium bowl combine banana or pineapple, nectarine, green pepper, cilantro or parsley, lime juice and brown sugar. Toss lightly to mix. Serve with toasted pita wedges.

Fruit - Pineapple Sage Cooler
2 1/2 cups water 6 Tbs. sugar 1 (12-oz.) can ginger ale, chilled 1/2 cup lemon juice 3 Tbs. chopped pineapple sage leaves 1 1/3 cups orange juice 2 (12-oz.) cans apricot nectar, chilled Heat water to boiling. Remove from heat and add sage leaves. Steep 10 minutes and strain, reserving liquid. Discard pineapple sage leaves. Stir in sugar until dissolved, then refrigerate. To serve: Pour mixture into punch bowl and add remaining ingredients and ice cubes. Serves 10.
