Fruit - Pineapple Cream Muffins

2 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
3 1/2 oz. instant vanilla pudding
2/3 cup brown sugar
1 egg -- beaten
1 cup sour cream
1 can crushed pineapple -- (8 oz) with juice
1/2 cup oil

Preheat oven to 425 degrees F. Spray muffin cups with nonstick cooking spray.

In a large bowl, sift together the flour, baking powder, baking soda, pudding mix, and stir in brown sugar.
In a separate bowl, combine the egg and sour cream. Fold in the pineapple and oil. Add the egg-pineapple mixture to the flour mixture, stirring until moistened. Batter will be thick. Bake for 15 minutes.

Makes 15 muffins

Mix base: 2 1/2 cups vanilla wafer crumbs 1/2 cup butter 1 1/2 cups icing sugar Filling: 2 eggs beaten juice and rind of 1 lemon 1/2 pint cream (beaten) 1 tablespoon white sugar 1 tsp. vanilla 1/8 tsp. salt 1 can crushed pineapple (drained) Combine mix base and press into an 8 x 8-inch pan. Cream butter and sugar together add eggs cream white sugar, vanilla and salt. Spread pineapple over base and pour cream over it. Chill until firm. If desired, sprinkle with toasted coconut.

1 cup flour 1/2 cup pecans, finely chopped 1/2 cup, plus 1 tablespoon butter 1 can (20 ounce) crushed pineapple, drained, save the juice 1 package, (3 ounce) lime flavored gelatin 1 package (8 ounce ) cream cheese 1 cup sugar 1 cup whipping cream, divided 1/2 teaspoon peppermint flavoring, divided 1/2 cup chocolate chips Preheat oven to 400 F. Grease and flour bottom of 9x13x2 inch pan. Combine flour, pecans, brown sugar, and 1/2 cup butter. Cut butter into dry ingredients until it resembles cornmeal. Press into bottom of prepared pan. Bake for 12 minutes; cool. Cream cheese
