Fruit - Pineapple - Cream Cheese Cake

2 (8 oz.) packages cream cheese
2 eggs
1/2 cup sugar
1 (20 oz.) can crushed pineapple, drained
1 tsp. vanilla
graham cracker shell
1 pint sour cream
3 tablespoons sugar
1 teaspoon vanilla

Preheat oven to 375 degrees F.

Beat cream cheese and eggs together. Add 1/2 cup sugar, pineapple, salt and vanilla. Pour into pie shell and bake 20 minutes. Let cool. Combine topping ingredients and spread on top. (optional - sprinkle with nuts). Bake an additional 5 minutes. Cool completely and refrigerate.

1 1/2 c. finely shredded or chopped cabbage 1/2 c. raisins 1/4 c. flaked coconut 1/2 c. finely diced celery 1 c. fresh pineapple, cut into 1/2 inch cubes, drained Dressing: 1/4 c. each: plain yogurt and mayonnaise 1/4 tsp. seasoned salt 1/4 tsp. Dijon style mustard paprika celery leaves for garnish Place cabbage into bowl. Set aside. Soak raisins in hot water for 5 minutes. Drain and add to cabbage. Stir in the coconut, celery and pineapple and lightly mix together. Set aside. Combine the dressing ingredients, mixing well. Fold dressing into the cabbage mixture and mix until well combined.

Lemon Jello 3 cups boiling water 1 (20 ounce) can crushed pineapple, drained 1 1/2 cups miniature marshmallows 3 bananas, cubed 1 cup nuts, chopped 1 cup pineapple juice with water to make 1cup 1/2 cup sugar 1 1/2 Tbl. flour 1 egg slightly beaten 1/2 pint whipping cream, whipped grated cheese Dissolve Jello in boiling water. Cool and add pineapple, marshmallows, bananas and nuts. Chill in glass casserole until firm. Heat pineapple juice in top of double boiler. Combine sugar, flour and egg. Mix with pineapple juice and cook until thick, stirring constantly. Cool and
