Fruit - Pineapple Cheese Cake

2 cups crushed graham crackers
1/3 cup sugar
1/2 cup melted butter or margarine
1 tsp. cinnamon

Combine all ingredients and pat into a 9x13x2 cake pan (reserving about 1/2-3/4 cup for top) and bake at 425 degrees for 5 minutes. Cool.

Mixture for torte:
1 (8 oz.) pkg. cream cheese
1/2 cup sugar
1 pkg. lemon or orange Jell-o
1 cup hot water
1/4 cup pineapple juice
1 #2 can crushed pineapple (20 oz. in it's own juice)
1 can evaporated milk, refrigerated over night
2 tsp. vanilla

Mix hot water with Jell-o, add pineapple juice, let cool until it begins to congeal. Mix cream cheese with the sugar. Whip chilled milk in a large cold bowl until it is stiff. Add cheese mixture and whipped milk to Jell-o and fold in gently, add vanilla and pineapple. Pour mixture into crust and sprinkle reserved crumbs on top, refrigerate for about 4-6 hours before serving.

1 (15 ounce) can pineapple tidbits 1/2 cup sugar 3 tablespoon flour 1 cup grated cheese 1 cup butter flavored cracker -crushed fine 3 tablespoon pineapple juice 1 butter/margarine, melted Drain pineapple, saving 3 tablespoons juice. Mix juice, sugar and flour. Stir in fruit and cheese. Pour into a 1 quart casserole dish. Combine crumbs and butter, sprinkle on top. Bake at 350 degrees for 20 to 30 minutes.

2 (8 oz) pkgs. cream cheese softened 1 green pepper diced 1 small onion diced 1 (8 oz) can crushed pineapple drained 1 t. seasoned salt 3-4 oz crushed walnuts 1 Maraschino cherry (optional)Mix all ingredients excepts walnuts together and form into a ball. Wrap in plastic wrap and chill for two hours. Unwrap and roll in crushed walnuts. Place optional cherry on top and rewrap. Chill. Serve with Triscuits.
