Fruit - Pineapple Banana Bread

1 1/2 cups sugar
1/2 cup shortening
2 eggs
3 medium bananas, smashed
1 cup crushed pineapple, drained
10 maraschino cherries, chopped
2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped walnuts

Preheat oven to 350 degrees and grease and flour two 4 x 8 inch loaf pans.

Cream sugar and shortening in a large bowl until light and fluffy. Add eggs and mix well. Blend in bananas. Add pineapple and mix well. Stir in cherries.

Combine flour, baking soda, baking powder and salt and mix well. Stir this into banana mixture. Stir in walnuts. Pour into prepared pans.

Bake for 40 to 50 minutes or until loaves test done. Cool in pans on a wire rack for 5-10 minutes. Turn onto wire rack to cool.

Yield: 2 loaves"

2 cans (Large) chunk pineapple, drained (reserve juice) 1 1/2 cups sugar 8 Tbls.flour 1 1/2 cups grated cheddar cheese 1 roll Ritz crackers, crushed2 Tbsp melted butter Preheat oven to 350.Drain pineapple and reserve 6 to 8 tablespoons juice. Place pineapple in ungreased casserole dish. Mix sugar and flour; sprinkle over pineapple. Sprinkle with reserved pineapple juice. Sprinkle grated cheese over top. Mix crushed crackers with melted butter and sprinkle over top of casserole.Bake until hot and bubbly. 20-30 minutes.
