Fruit - Peach - Spiced Peaches With Walnuts

Serving Size: 8

8 peaches, peeled, pitted and halved
1/2 cup orange juice
2 tablespoons sugar
1/2 teaspoon cinnamon
3 sprinkles each ground nutmeg and ground cloves
1/2 cup coarsely cut walnuts

Place peaches in one layer in a shallow baker, and pour orange juice over the top. Stir together sugar, cinnamon, nutmeg and cloves; sprinkle evenly over the fruit.

Bake peaches in a 350F oven, basting every now and again, about 20 minutes. Sprinkle top with walnuts and bake another 10 minutes. Serve warm or at room temperature. Is good topping for ice cream or pound cake. Serves 8.

To make Spiced Apples with Walnuts: Substitute 2 pounds apples, peeled, cored and sliced, for the peaches. Total baking time is 45 minutes. Sprinkle with walnuts after 35 minutes, and then bake 10 minutes longer.

3 1/2 lb. firm pears or peaches, peeled halved and cored (for pears) Vinegar-water (2 qts. water plus 2 T. white vinegar 4 (3 inch) cinnamon sticks, broken 1 whole nutmeg, chopped 2 T. anise seed (optional) 3 c. granulated sugar 1 1/2 c. white vinegar 1 c. water Places fruit in vinegar-water to prevent browning. Tie cinnamon, nutmeg and anise seed in a spice bag or cheesecloth. In a 6 to 8 quart saucepot, combine sugar, vinegar, water and spice bag. Bring to a boil. Reduce heat and simmer for 5 minutes.
