Fruit - Peach - Peach Mint Tea

2 large ripe peaches
2 Tbl. loose Darjeeling tea
4 cups boiling water
1 cup sugar
1 cup water
1 handful fresh mint sprigs


Cut peaches in half and remove pits. Squish peaches by hand and add tea. Pour in boiling water. Let steep for 30 minutes, then strain.

Mix sugar, 1 cup water and mint in a saucepan. Bring to a boil, then strain. Add to peach tea mixture. Shake to mix well. Serve over ice and garnish with mint. Serves 4.

4 cups chopped peaches 1 3/4 cups confectioners sugar 2 cups heavy cream pinch salt 1 tsp vanilla 1/2 tsp apple pie spices Peel and chop peaches, add sugar. Place in refrigerator for 1 hour. Drain peaches and mash. Drain again and reserve juice. In chilled bowl, combine whipping cream, vanilla, salt and spice. Add juice from peaches and whip until creamy. Fold in mashed peaches and pour in to mold or parfait glasses. Freeze until firm.

2-2/3 cups flaked coconut (7 ounces) 1 cup finely chopped walnuts 1/4 cup butter or margarine, melted 1 quart peach ice cream, softened 1 pint vanilla ice cream, softened 12 oz. package frozen, loose-pack raspberries, thawed 1/3 cup sugar 1 tablespoon cornstarch 1 cup sliced, peeled peaches Preheat oven to 325º F.
