Fruit - Peach - Fresh Peach Delight

1 package yellow cake mix
1 small package instant vanilla pudding
1 cup sour cream
1 cup milk
3 cups fresh peaches, peeled and sliced
9 oz container Cool Whip


Prepare cake to package directions. Use a greased 9x13 inch pan. Bake and cool.
Prepare pudding mix with sour cream and milk. Spread over cooled cake. Place sliced peaches
on top of pudding mixture. Spread with Cool Whip. Refrigerate for several hours or overnight

1 cup plain nonfat yogurt 2 tsp. fresh lemon juice 2 tsp. honey 1 tsp. Dijon mustard 2 large fresh peaches, peeled and chopped 1 celery stalk, chopped 2 tsp. sesame seeds 1 Tbsp. fresh parsley, minced 1 Tbsp. fresh cilantro, minced 2 Tbsp. raw onions, minced 4 dried apricots, minced In a small bowl or measuring cup, combine the yogurt, lemon juice, honey and mustard. In a large mixing bowl, toss together the peaches, celery, sesame seeds, parsley, cilantro, onions and apricots. Add the yogurt mixture and toss again. Chill for at least 3 hours before serving.

1/2 recipe plain pastry 3 1/2 cups sliced fresh peaches (about 8 medium) 1 cup sugar 2 tablespoons all purpose flour 1 egg slightly beaten 1 cup heavy sweet cream 1/2 teaspoon vanilla 1/4 cup shredded almonds Preheat oven to 450.Line 9 inch pan with plain pastry and fill with sliced peaches. Combine sugar and flour. Add egg and cream and mix well. Stir in vanilla. Pour mixture over peaches. Sprinkle with almonds. Bake for 10 minutes. Reduce heat to 350 and bake until done about 35 minutes longer. Serve cold.
