Fruit - Pasta Fruit Salad

1 lb. rosamarina pasta
2 large cans pineapple chunks
2 large cans Mandarin oranges
1 (12 oz.) container Cool Whip
2 Tbsp. lemon juice
2 beaten eggs
1 cup sugar
1 Tbsp. cornstarch
2 Tbsp. flour


Boil pasta. Drain. Drain fruit and save liquid.

Mix in saucepan: fruit juices, lemon, eggs, sugar, cornstarch and flour. Cook mixture until thick. Boil 1 minute.

Mix pasta and fruit chunks lightly. Mix in cooked mixture. Let cool. Leave in refrigerator overnight.

Mix Cool Whip in and serve.

2 medium unpeeled nectarines, finely diced 1 mango, peeled & diced 1/2 cup fresh raspberries 3 T red onion, diced 1 to 2 fresh jalapenos, seeded, finely minced 1 T lime juice 1 T raspberry vinegar 1 T raspberry liqueur 2 t olive oil Salt and white pepper to taste 3 T chopped cilantro Cook's note: If red onion is strong, place diced onion in a colander in sink, pour 1 cup of boiling water over it.
