Fruit - Orange - Nutty Orange Chicken Pasta Salad

2 cups cooked chicken, diced
2 cups rotini pasta
1 cup seedless grapes
11 ounces mandarin orange sections
1/2 cup chopped celery
1 tablespoon red onion, chopped
1 cup mayonnaise
1 cup cool whip
1/2 cup sliced almonds

In a large bowl mix together first six ingredients. In small bowl mix together mayo and Cool Whip. Stir into chicken mixture. Chill until ready to serve. Just before serving stir in almonds.

2/3 cup sliced almonds 1/3 cup sugar 8 cups mixed salad greens 1 (15-ounce) can mandarin oranges, drained and chilled Vinaigrette (recipe below) Cook almonds and sugar in a large non-stick skillet over medium heat, stirring often, 5 to 7 minutes or until almonds are browned and sugar is melted. 1 1/4 cups sugar 1 orange 1/2 cup shortening 2 eggs -- beaten 1/2 teaspoon salt 1/2 teaspoon baking powder 1 teaspoon baking soda 1 cup pitted dates 2 cups cake flour 1 cup soured milk Preheat oven to 375° F.Combine 1/4 cup sugar and orange juice (squeezed from orange); stir until sugar is dissolved. Set aside. Combine 1 cup sugar with shortening. Add eggs. Sift flour, measure and sift with baking powder, soda and salt. Add alternately with milk to shortening-egg mixture. Add dates (or raisins) which have been ground with the orange rind. Mix until well blended. Pour
