Fruit - Orange - Mandarin Tapioca

1/3 cup sugar
3 tbsps. Minute tapioca
2 3/4 cups milk
1 egg well beaten
1 tsp. vanilla
2 (10 oz.) cans mandarin orange (drained)
2 handfuls mini marshmallow


Mix the first four ingredients in a saucepan and let stand 5 minutes. Cook on medium heat ,stirring constantly, until mixture comes to full boil. Remove from heat and stir in vanilla and mini marshmallows. Cool and add the mandarin orange. Chill in refrigerator, although it's also great newly made.
Note: It's also good with peaches (1 can), drain well and chop fruit to bite size pieces.
