Fruit - Mrs. Springer's Orange Cake

1 1/4 cups sugar
1 orange
1/2 cup shortening
2 eggs -- beaten
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
1 cup pitted dates
2 cups cake flour
1 cup soured milk


Preheat oven to 375° F.

Combine 1/4 cup sugar and orange juice (squeezed from orange); stir until sugar is dissolved. Set aside.

Combine 1 cup sugar with shortening. Add eggs. Sift flour, measure and sift with baking powder, soda and salt. Add alternately with milk to shortening-egg mixture. Add dates (or raisins) which have been ground with the orange rind. Mix until well blended. Pour into well-oiled loaf pan.

Bake for 45 minutes. Pour orange juice-sugar mixture over cake before removing from pan.

1/3 cup sugar 3 tbsps. Minute tapioca 2 3/4 cups milk 1 egg well beaten 1 tsp. vanilla 2 (10 oz.) cans mandarin orange (drained) 2 handfuls mini marshmallow Mix the first four ingredients in a saucepan and let stand 5 minutes. Cook on medium heat ,stirring constantly, until mixture comes to full boil. Remove from heat and stir in vanilla and mini marshmallows. Cool and add the mandarin orange. Chill in refrigerator, although it's also great newly made. Note: It's also good with peaches (1 can), drain well and chop fruit to bite size pieces.
