Fruit - Mori-nu Hawaiian Smoothie

1 cup pineapple juice, unsweetened
1 cup crushed pineapple (fresh or use one 8 oz. can)
2 Tbsp. apricot jam
1 (12.3 oz.) pkg Mori-Nu Silken Lite Firm Tofu
1 ripe banana


Combine all ingredients in a blender. Whip until smooth. Chill or blend in a few ice cubes. Serve cold.

Makes 2 (10 oz.) servings.

1 cup heavy whipping cream 3 oz cream cheese, softened and cubed 1 (30 oz.) can fruit cocktail, drained 2 (5 oz. ea) cans mandarin oranges, drained about 1 cup chopped nuts about 3 cups mini marshmallows about 1 cup coconut (toasted, if desired) Whip cream until soft peaks.
