Fruit - Mixed Fruit - Summer Fruit On Ice

1 watermelon, cut into tall triangles
1 pint fresh strawberries, hulled and washed
1 pint fresh raspberries
1 pint fresh blueberries
1 pint fresh blackberries
Handful of fresh mint leaves
Crushed ice


Cover the bottom of a large platter with crushed ice. Arrange the fruit over the ice and sprinkle with mint leaves. Serve immediately.

1/2 c sugar 3 tbsp quick-cooking tapioca 2 1/2 c water, divided 1 can (6 oz) frozen orange juice concentrate 1 pkg (10 oz) frozen sliced sweetened strawberries, thawed 2 c fresh or frozen sliced peaches, thawed and cut into bite-size pieces 1 can (11 oz)mandarin oranges, drained 2 medium ripe bananas, sliced 1 pint lime sherbet, optional Combine sugar, tapioca and 1 1/2 c water in a saucepan. Cook over medium heat for 5 to 6 minutes or until thickened and clear. Remove from heat. Stir in orange juice concentrate and rest of the water. Continue stirring until the orange
