Fruit - Mixed Fruit - Layered Fruit Salad

2 C cubed fresh pineapple
1 pint fresh strawberries, hulled and sliced
2 kiwi fruit, peeled and sliced
3 medium bananas, sliced
2 oranges, peeled and sectioned
1 C seedless grapes
1 pint blueberries

2/3 C fresh orange juice
1/3 C fresh lemon juice
1/3 C packed brown sugar
1/2 t grated orange peel
1/2 t grated lemon peel
1 t pure vanilla extract

In a sauce pan, bring to boil all ingredients for sauce except vanilla; simmer 5 minutes. Add vanilla and cool.

Meanwhile, in a large clear glass salad bowl, arrange fruit in layers in order listed. Pour sauce over fruit. Cover and refrigerate several hours.

10-12 servings.

2 pkgs (4 oz size) or 1 (8 oz) jello, orange or strawberry flavored 1 1/2 c boiling water 1 c cold water ice cubes 2 tbsp lemon juice 2 c cut up fruit* 1 3 oz pkg cream cheese, softened 1/8 tsp ground cinnamon Dissolve gelatin in the boiling water. Combine the cold water with enough ice cubes to make 2 1/2 cups. Add to the gelatin. Add the lemon juice and stir until slightly thickened. Remove any unmelted ice. Bite-sized pieces of cantaloupe and/or honeydew melon red grapes kiwi, sliced and cut in half sliced strawberries fresh blueberries white grapes Topping: 8 ounces cream cheese -- softened 1/2 cup powdered sugar 2 Tablespoons fresh lemon juice 1/2 pint whipping cream -- whipped Garnish: sliced strawberries and blueberries -- optional Layer fruits in the order listed in a large glass bowl. For the topping, with a mixer blend cream cheese, powdered sugar, and lemon juice; mix well. By hand fold in the whipped cream. Spread this mixture over the fruit and chill. If desired, garnish
