Fruit - Mixed Fruit - Fluffy Fruit Pie

9" baked and cooled pie shell
1 pkg. lemon-flavored gelatin
1/2 cup sugar
1 cup chilled undiluted Evaporated milk
1 Tbsp. Lemon juice
1 1/4 cups of one of:
crushed pineapple
apple juice
grape juice
prune juice
apricot nectar
pineapple juice

Bring the fruit to fruit juice to a boil. Add gelatin and stir until dissolved. Stir in sugar. Chill about 30 minutes, or until mixture mounds slightly when dropped from spoon. Whip milk and lemon juice until stiff peaks form. Pour on top of gelatin mixture. Beat in slowly with rotary beater or electric mixer, on low speed.

Pour into chilled pie shell. Chill several hours until firm.

3 Constant Comment Orange Spice tea bags 1 cup fresh or frozen raspberries 1 orange, thickly sliced 1 lemon, thickly sliced 1/4 to 1/2 cup granulated sugar 4 cups boiling water 2 cups soda water (seltzer) Ice cubes 2 to 3 big sprigs fresh lemon balm, optional Place tea bags, berries, orange, lemon and sugar in a heatproof pitcher or bowl. Pour in boiling water. Let steep 10 to 15 minutes. Remove tea bags. Let mixture cool to room temperature. If desired, strain out citrus. Chill tea. When ready to serve, add soda water; serve in tall glasses filled with ice.
