Fruit - Melon - Melon Madness

1 cup watermelon, diced and seeded
1 cup honeydew, diced
1 cup cantaloupe, diced
1 cup fat-free vanilla yogurt (may use light yogurt)
2 tablespoons frozen limeade concentrate
1/2 teaspoon pure vanilla extract
1/2 cup crushed ice


Place watermelon, honeydew and cantaloupe in blender cup. Liquefy on high speed. Add yogurt, limeade and vanilla. Blend. Gradually add crushed ice on highest speed until ice is completely incorporated. Serve immediately.

Makes 3 to 4 servings

Approximate values pe serving: 182 calories, 1 g fat, 4 mg cholesterol, 40 g carbohydreates, 25 mg sodium, 7 percent calories from fat

2 lbs watermelon rind4 cups sugar1 cup salt to 4 qts. water2 qts. Vinegar1/4 cup of mixed pickling spices. Pare rind, remove all red meat and cut into small strips or squares. Soak in salt water over night. Next morning soak in fresh water about 2 hours, drain. Boil vinegar, sugar and spices, tied in a bag, until clear, about 12 minutes. Add the watermelon rind and boil until tender, but not soft. Test with a straw. Remove rind to a jar, with perforated skimmer, boil syrup down a little and pour hot in jars over the cooked rind.
