Fruit - Marlen's Canteloupe Bread

3 eggs, beaten
1 cup vegetable oil
2 cups granulated sugar
3 tsp. pure vanilla extract
1 canteloupe (about 2 cups), cut into 2" chunks and pureed (you can pulse so that bits of fruit remain)
3 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
3/4 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. ground ginger
1 cup chopped walnuts


Preheat oven to 325 degrees F.

Mix eggs, oil, sugar and vanilla. Add pureed canteloupe to mixture. Sift dry ingredients. Add to liquid. Pour into 2 greased and floured 9x5 loaf pans (or spray them with Baker's Joy). Bake 325* for 1 hour or until done. Check after 50 minutes.

2 lbs watermelon rind4 cups sugar1 cup salt to 4 qts. water2 qts. Vinegar1/4 cup of mixed pickling spices. Pare rind, remove all red meat and cut into small strips or squares. Soak in salt water over night. Next morning soak in fresh water about 2 hours, drain. Boil vinegar, sugar and spices, tied in a bag, until clear, about 12 minutes.
