Fruit - Jerilyn's Nortwest Blackberry Cobbler

6 cups blackberries -- rinsed
1 1/4 cups sugar
1/4 cup all-purpose flour

2 cups all-purpose flour
1 cup sugar -- + 1 tbsp.
1 tbsp. baking powder
1 tsp. salt
1 cup milk
8 tbsp. unsalted butter -- melted
1/4 tsp. ground nutmeg
1 cup heavy whipping cream

Preheat oven to 350°F.

Make filling: Mix the berries, sugar and flour together in a large bowl, and pour into a 15" nonreactive oval baking dish.

Make batter: Combine flour, 1 cup sugar, baking powder, and salt in food processor. Process to combine. Then add milk and melted butter and beat until smooth. Spoon the batter over the berries, making sure you spread it to the edges of the dish (to prevent any excess juice from boiling over). Sprinkle the remaining 1 tbsp. sugar and nutmeg over the batter.

Bake the cobbler in the center of the oven until the crust is brown and crisp on the outside and cooked all the way through, and the berries are bubbling up through it, about 1 hour. Remove the cobbler from the oven and let it cool for 10 minutes before serving. Serve the cream alongside.

Makes 8-10 servings

1 baked and cooled pie shell 1 (3 oz.) pkg. Blackberry Jello 4-5 cups berries 1 cup water 1 cup sugar 2 Tbsp. cornstarch Cool Whip Cook water, sugar and cornstarch until thickened and clear. Remove from heat and add dry Jello. Stir until Jello is dissolved. Cool. Pile berries in cooled pie shell in a mound. Drizzle Jello mixture over berries and refrigerate.
