Fruit - Flourless Orange Cake

2 oranges
250 g sugar
250 g ground almonds
6 eggs
1 tsp baking powder

Boil for 1 hour two large oranges, allow to cool then cut, remove any pips and mush in food processor. Blend in all other ingredients. You may need to do it in a few lots if you only have a small processor.

Pour into a cake tin lined on the bottom with grease poof paper and bake at 180 for approx 1 hour. It should be firm in the middle though it is a very moist cake.

1 (12 ounce) package vanilla wafers 1/2 cup frozen orange juice thawed but undiluted 3/4 cup confectioners' sugar 3/4 cup coconut shredded 1/2 cup chopped nuts Dash of rum - optional Combine all ingredients in a large bowl.
