Fruit - Drying Bananas

Avoid over-ripe bananas. Slice into even pieces and peel. Soak in an ascorbic acid bath 2-3 minutes before drying. Dry approximately 55 hours at 100 degrees or until crisp. Dry in a 200 degree oven with the door propped open. The food must be rotated frequently.

3 large bananas 5 tbs. butter 1/4 cup sugar 1/2 cup heavy sweet cream 1/4 cup dry sherry 1 tsp. vanilla Sliced peeled bananas lengthwise. Sauté in butter until light brown.
