Fruit - Cranberry Walnut Squares

Cookie Crust:
2 1/2 cups flour
1 cup (2 sticks butter or margarine) cut in pieces
1/2 cup sugar
1/2 teaspoon salt

4 eggs
1 cup Karo® Light or Dark Corn syrup
1 cup sugar
3 tablespoons butter or margarine melted
2 cups coarsely chopped fresh or frozen cranberries
1 cup chopped walnuts

Preheat oven to 350° F.Spray 15 x 10 x 1 inch baking pan with nonstick spray.

In large bowl with mixer at medium speed, beat flour, butter or margarine, sugar and salt until mixture resembles coarse crumbs. Press firmly into prepared pan. Bake 20 to 23 minutes or until golden brown. Top with filling.

In large bowl, beat eggs, corn syrup, sugar and butter until well blended.Stir in cranberries and walnuts.Immediately pour over hot crust, spread evenly.

Bake 25 to 30 minutes or until set. Cool completely. Cut into 1-1/2 inch squares.

Makes about 60 squares.

Pastry: 1/2 cup butter or margarine softened 3/4 cup sugar 1 egg 1 teaspoon vanilla extract 1 1/2 cups all purpose flour 1/4 teaspoon baking powder 1/4 teaspoon salt Filling: 1/2 cup finely ground cranberries 1/2 cup finely chopped walnuts 1 tablespoon grated orange peel 3 tablespoons firmly packed brown sugar 2 teaspoons milk Prepare pastry: In large mixer bowl combine butter, sugar, egg and vanilla. Beat at medium speed until light and fluffy; scraping bowl occasionally. Combine flour, baking powder and salt; add to creamed mixture and mix just until combined. Wrap and refrigerate dough

5 cups shredded cabbage 1 carrot, shredded 1/4 cup finely chopped celery 1/4 cup chopped green or red onion 1/4 cup chopped sweet red pepper 1/3 cup walnuts 1/4 cup dried cranberries Dressing:2 tablespoons canola oil 2 tablespoons balsamic vinegar 1 teaspoon brown sugar 1 tablespoon soy sauce 1 teaspoon minced garlic Combine dressing ingredients. In a large mixing bowl, combine cabbage, vegetables, walnuts and cranberries. Add dressing; toss to coat. Cover and chill.
