Fruit - Cranberry Salad

2 boxes Jello® in any combination: cherry, raspberry or strawberry (3 oz ea.)
2 cups boiling water
2 cups sugar
1 quart chopped cranberries
2 cups diced celery
1 cup chopped nuts


Mix Jello with the 2 cups of water and refrigerate until slightly set. Add remaining ingredients, return to frig and let set, serve cold.

1 cup water 1 cup sugar 12 oz. package fresh cranberries 2 tbsp. chopped canned jalapenos 1 tsp. lime juice 1 tsp. dried cilantro 1 tsp. cumin 1 green onion, white and green parts sliced Combine water and sugar, bring to boil over medium heat. Add berries and bring back to the boil. Gently boil for about 10 minutes without stirring. Pour into a glass bowl and add remaining ingredients. Stir gently. Put plastic wrap directly on salsa. Cool to room temp, then refrigerate. Best served at room temp.

2 cps. fresh cranberries 1 1/4 cp water 1cp sugar 1 small package raspberry Jello 1/2 tsp salt 1/2 cp. finely chopped celery 1/2 cp. chopped walnuts Cook cranberries in water until soft but still hold shape, about 5 min or less. Add sugar; stir till dissolved. Add Jello; mix well. Cool slightly then add walnut and celery. Chill well * variation: 1/2 cp finely chopped carrots 1/2 cp chopped apple
