Fruit - Cranberry Dumplings

Yield: 1 Servings

2 cups Flour
dash salt
2 tsp. Baking powder
Add milk to make firm dough

Divide in 4 or 5 parts and roll each part into a round piece about 5 inches in diameter. In the center of each piece put 1/3 cup uncooked cranberries. Gather edges up around berries and squeeze together.

Place them in a steamer and steam 1/2 to 3/4 hours. Serve with molasses sauce made by cooking 1 cup molasses and small piece of butter until molasses stops foaming.

Any other fresh berries may be substituted for the cranberries and any other sauce may be used.

Yields about 1 cup 1 cup whole cranberry sauce 1 large shallot, chopped 1 red jalapeno pepper, stemmed and partly seeded 1 tablespoon fresh lemon juice 1/4 cup fruity red wine 2 teaspoons ginger preserves 1 1/2 tablespoons minced fresh rosemary or 1 1/2 teaspoons dried 1 tablespoon canola oil hot pepper sauce to taste In a food processor, puree cranberry sauce, shallot, jalapeno, lemon juice, wine, ginger preserves, rosemary, oil, and hot pepper sauce. 1/2 cup butter 1 cup sugar 3/4 cup brown sugar -- firmly packed 1/4 cup milk 2 tablespoons orange juice 1 egg 3 cups flour 1 teaspoon baking powder 1/2 teaspoon cinnamon 1/2 teaspoon salt 1/4 teaspoon baking soda 1 cup walnuts -- chopped 2 1/2 cups cranberries -- chopped Preheat oven to 375 degrees. Grease cookie sheets. Cream together butter and sugars. Beat in milk, orange juice and egg. In separate bowl, stir together flour, baking powder, cinnamon, salt and baking soda.
