Fruit - Cranberry - Cranberry Cider Sauce

2 (12-ounce) packages cranberries
2 cups sugar
1/2 cup apple juice or cider
4 tablespoons fresh orange juice
Grated zest of two limes
Pinch of salt
6 tablespoons Grand Marnier liqueur


Pick over cranberries. Combine cranberries, sugar, juices, lime zest and salt in a large, heavy saucepan. Bring to a gentle boil. When cranberries pop, remove from heat and add Grand Marnier. This recipe may be made one week ahead. Store in a tightly covered container in the refrigerator. Yields approximately 5½ cups.

2 c (12 oz) semisweet chocolate chips 2/3 dried cranberries 2/3 c cashews Melt the chocolate chips in a saucepan or microwave oven. Stir in the cranberries and cashews. 6 (5 oz.) chicken breasts (skinless and boneless) 1 (8 oz.) bottle fat-free Catalina salad dressing 1 package dry onion soup mix 1 (16 oz.) can whole cranberry sauce Combine dressing, soup mix and cranberry sauce. Pour over chicken breasts. Place in refrigerator and marinate overnight or at least two hours. Remove from marinade, reserving marinade to brush chicken during baking. Bake uncovered for 45 minutes at 350. Serves 6.
