Fruit - Cranberry - Bette's Spiced Cranberries

1 pkg. (12 oz.) fresh cranberries
1/3 cup water
9 whole cloves
9 whole allspice
1 1/2 stick cinnamon, broken into pieces
1/8 tsp. (scant) mace
3/4 cup brown sugar

Place berries in a covered pot; add water and whole spices, tied up in a cheesecloth bag with the powdered mace. Bring to boil, reduce heat and simmer, covered, about 25 minutes. Remove spice bag and discard. "Smash" berries slightly and, while hot, add the brown sugar. Cool before serving.

2-1/2 cups sugar 1-1/2 cups water 1 quart cranberries In a saucepan, stir sugar and water together until sugar has dissolved and bring to a boil. Put cranberries in a heat-resistant bowl.Pour the boiling syrup over the berries. Put the bowl in a steamer for 45 minutes. Remove and cool without stirring. Leave in a warm, dry room 3 to 4 days. Stir at intervals. When the syrup reaches a jellylike consistency, remove the berries and let them dry 3 days or longer--out of the syrup. Turn them for uniform drying. 2 C fresh cranberries 1 c sugar 1/4 c Apple Brandy (Calvados), or Apple jack if you can not find Put into a glass baking dish, and bake in a preheated 275 degree oven, stir every so often. Make sure you cover with foil too. Bake for approx 1 1/2 hours to 2 hours. It is best to make up to 6 weeks early. It mellows as it ages, and gets better, and better.
