Fruit - Cherry - Cream Cheese Dessert

Servings: 8 (1/2 cup)

1 Tub (12 oz) light cream cheese product (room temperature)
1 (1.4 oz) box sugar-free vanilla instant pudding
3 Cups skim milk
1 can (20 oz) Lite Cherry Filling**

** The cherry pie filling contains sugar and should be limited by diabetics. If desired, eliminate topping and top individual servings with sugar-free all fruit preserves of choice.

In small mixing bowl, combine pudding mix and milk. Beat on low speed to mix ingredients. Add cream cheese. Increase speed and beat until smooth and thickened. Pour into individual or large serving dish. Top with pie filling and refrigerate.

1 head romaine lettuce, medium chopped 1/2 cup crumbled feta cheese 1/4 cup diced green onion, some green included 11 ounce can mandarin oranges drained 1 cup smoked turkey, cut into 1/2 inch cubes 2/3 cup sweet cherries, washed, halved and pitted Balsamic Vinaigrette (recipe follows) Toss ingredients, except cherries and vinaigrette, together in a bowl. Drizzle balsamic vinaigrette over salad, reserving 1 tablespoon, and toss salad. Drizzle remaining vinaigrette over cherries and toss to coat. Maraschino cherries (save juice) 1 cup shortening 2/3 cup sugar 1 egg 2 1/2 cup flour 3/4 tsp. baking powder 1/4 tsp. salt 1 tsp. vanilla powdered sugar coconut Preheat oven to 350 degrees F.Cream together shortening, sugar and egg. Add dry ingredients and vanilla. Wrap about 1 teaspoon dough around cherry until covered. Bake at 350 degrees for 12 to 15 minutes until light brown. Glaze: Powdered sugar and cherry juice to make thin icing. Dip top of hot cookies in icing then in coconut. Makes 80 to 90 cookies.
