Fruit - Cardamom Banana Bread

2/3 cup raisins
1/3 cup dark rum or apple cider
1 cup all-purpose flour
3/4 cup whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cardamom
3 ripe bananas, mashed
1/3 cup canola or corn oil
3/4 cup brown sugar
2 eggs
1/2 cup chopped nuts

Preheat oven to 350 degrees. Grease one 9x5" or 10x4" loaf pan.

In a small saucepan, combine the raisins and the rum. Cook over medium heat until simmering, then remove from the heat and allow to cool 10 minutes.

In a large bowl, mix together the mashed bananas, brown sugar, oil and eggs with an electric mixer for 1 minute. Sift together the white flour, whole wheat flour, baking powder, baking soda, salt and cardamom. Add flour mixture to egg mixture and stir with a spoon until well blended. Stir in nuts and rum soaked raisins.

Pour batter into the prepared pan and bake for 50 to 60 minutes or until a toothpick inserted in middle comes out clean. Allow bread to cool slightly before removing from the pan.

Add eggs, one at a time, beating well after each. Mix in mashed banana. Blend in flour, baking powder and salt. Stir in butterscotch morsels and nuts. Spread in a greased 10x15-inch pan. Bake at 350 F. for 35 minutes.

1 3/4 cups all-purpose flour 2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. cinnamon 1/2 tsp. ground nutmeg 1 cup mashed bananas 3/4 cup sugar 1 large egg 2 large egg whites 1/4 cup canola oil 1/4 cup skim milk 1/2 cup butterscotch chips (can also use cinnamon chips) Combine flour, baking powder, baking soda, cinnamon, and nutmeg in a bowl; set aside. In a mixing bowl, combine the mashed banans, sugar, egg, egg whites, and oil, blending well. Add the flour mixture alternately with the milk to the banana mixture. Stir in butterscotch chips. Pour into a 9x5x3
