Fruit - Buttermilk Banana Bars

2 1/2 cups All Purpose Flour
1 2/3 cups sugar
1 1/4 teaspoons baking powder
1/2 teaspoon salt
2/3 cup cooking oil
2/3 cup buttermilk or sour milk*
1 1/4 cups banana -- ripe mashed
2 eggs
2/3 cup walnuts -- chopped

Cream Cheese Frosting:
8 ounces cream cheese -- softened
1/2 cup butter or margarine
1 tablespoon vanilla
1 pound powdered sugar -- sifted

Preheat oven to 350° F. Grease and flour a 15 x 10 x 1-inch baking pan.

In a large mixing bowl, combine the all-purpose flour, sugar, baking powder and salt. Make a well in the center of the dry ingredients. Add the cooking oil, buttermilk, mashed banana and eggs. Beat with an electric mixer on low speed till combined; then, beat at medium speed for 1 minute. Fold in walnuts. Spread in prepared baking pan.

Bake in a 350º oven for 30 to 35 minutes or till a toothpick inserted in the center comes out clean. Cool completely.

Prepare Cream Cheese Frosting. Spread over the cooled dessert. Cut into bars. Makes 48.

Cream Cheese Frosting: In a medium mixing bowl with an electric mixer on low speed, Beat together cream cheese, butter and vanilla till smooth. Gradually add powdered sugar, beating the mixture on medium speed till light and fluffy.

*Note: To make sour milk, combine 2 teaspoons lemon juice or vinegar and enough milk to make 2/3 cup. Let stand for 5 minutes before using.

Note: The next time you crave a sweet, try these moist banana snack bars with creamy frosting. Dianne Tellier of Wyoming, Michigan (2 miles west of Grand Rapids), makes them for a refreshing ending to her barbecues. She likes to chill the bars before serving.

In a mixing bowl, combine the mashed banans, sugar, egg, egg whites, and oil, blending well. Add the flour mixture alternately with the milk to the banana mixture. Stir in butterscotch chips. Pour into a 9x5x3

1 package (18.25 oz.) yellow cake mix 2 medium, ripe bananas, mashed (about 1 cup total) 3 (2.1 oz ea) NESTLE® BUTTERFINGER® Candy Bar, chopped, divided 1 container (16 oz.) prepared white frosting Preheat oven to 350° F. Grease and flour 13 x 9-inch baking pan. Prepare cake mix batter according to package directions; stir in banana and 3/4 cup chopped Butterfinger. Pour into prepared pan. Bake for 40 to 50 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Frost cake; sprinkle with remaining chopped Butterfinger.
